When deciding what meals go into the family’s menu scrapbook, I have to ask, “how many times have I made the dish?”. If I’m making it over and over again, usually because it was popular the first time, then there’s a high chance it makes it onto Dad’s Menu.
This recipe is one that I have made too many times to count. I first made it over a year and a half ago. I love it because from beginning to end, it only takes 30 minutes. Also, there’s no mixing complicated combinations of herbs and spices; it’s just a sachet of Fajita Seasoning to give it the flavor.
Also, it uses fresh ingredients, which I love. Fresh peppers, tomatoes, and chicken.
My kids love this meal, and it’s cheap, and you’ll make it over and over again. I hope your family loves it too!
You’re going to need a saucepan or a pot that will fit all the ingredients together.
Here’s the list of ingredients:

1 lb. Chicken tenders
1 Bell Pepper
1 Yellow Onion
Garlic (as much as you want!)
1 Cup of Rice
2 Tomatoes
14oz can of Black Beans
Tomato Paste
1 sachet of Fajita Seasoning Mix
2 cups of Chicken Stock
2 cups Grated Cheddar Cheese
Steps
Cook the chicken: Coat the chicken tenders in ground paprika, salt, and pepper to taste. I completely cover the chicken on both sides. Don’t worry; the paprika and pepper won’t be too overpowering for kids. Melt butter in a saucepan and cook on both sides until golden brown. Cook until the chicken is 165 degrees F—once cooked, slice into bite-sized pieces and set aside. See an example below of what it should look like.
Cut the vegetables: Chop the Bell Pepper, onion, and tomatoes. Chop it small enough that the kids won’t notice the vegetables too much.
Cook the vegetables: Cook the onion, peppers, and garlic in the same pan that you just took the chicken out of. Stir around for a few minutes and then add the tomato, tomato paste, beans, fajita seasoning, chicken stock, and rice. Throw it all in there! See example below.
Cook until done: Cook until the rice is cooked. Takes about 10-15 minutes. Turn the heat down low, add the grated cheese on top and let it melt. Serve!
